Vero Beach

You may have noticed I've been absent for a few days. We just got back from a relaxing vacation in Vero Beach Florida. It's really important to get away. Even if it's only for a few days, it really revives your spirit! 
Being from Florida, we figured why not choose a place in our own state? Flying can be such a chore and Florida IS a vacation destination right? We found this beautiful beach front resort and spa called  Costa d'Este nestled on Florida's east coast and only a 2 hour drive from our house. This resort is owned by Gloria Estefan and is recognized as one of the top 5 celebrity owned hotels in the world! I know what you're thinking. Expensive right? Not if you go on the off season, and stay on the off days. For us it was Sunday through Thursday. This place was a dream! The minute we drove up we were impressed with the art deco design. And as we entered the lobby, we were met by the aroma of burning incense and a friendly helpful staff. 






















This resort specializes in Cuban cuisine with the influence of Spanish, Latin, and Creole flavors. I knew this would be the perfect choice for my husband who is a ceviche lover! The restaurant and poolside Tapas menu serves 3 different types of ceviche. Hawaiian Aji Tuna, Lobster, coconut and crab, or the Mediterranean mix which is shrimp, calamari, and octopus! I ordered the Palomilla sliders above which are cute little marinated skirt steak burgers with sauteed onions! Delish!




















I BEST part of this vacation was the relaxation factor. We had no agenda. Just sunned ourselves by the pool, sipped cocktails (Mojitos are the specialty here) ate amazing seafood right next door at the OCEAN GRILL, walked the beach, and slept IN to the sound of crashing waves.

Another bonus at the Costa d'Este Resort? They are "pet friendly" so we could bring our buddy Jake! Not only that, they don't charge a ridiculous pet fee like most other hotels.

This looks like paradise! What an amazing post for a first time visitor...wow! I love Cuban food and only can imagine how delicious everything was!
