Angel Food Cupcakes

On my quest to get back to my pre-baby body, I'm certainly not going to give up a little dessert here and there!
Enter, Angel Food Cake.
Angel Food Cake is named because of its airy lightness that was said to be the "food of the angels," and it's fat free which makes it the perfect guiltless treat.
I bought a Duncan Hines angel food cake mix, and decided to make cupcakes because I don't own a tube pan. I also figured that a cupcake would be a good portion.

Directions:
Drop paper cups into your cupcake pan. Follow the directions on the back of the box, and bake at 375 degrees for 8 minutes. 8 is the magic number! Any longer your cupcakes will burn. Trust me, I tried it.
Let cool and peel off the paper. Top with whipped cream (not icing) and finish off with a strawberry or any berry of your choice. I'm going with raspberries next
Enjoy!

Gratitude: Today I am GRATEFUL for my puppy Jake. He is loyal, happy, lives in the moment and is more than tolerant of his new baby brother!
