Spaghetti Squash Alla Vodka


















My husband and I eat a lot of spagetti squash in the Fall, and this Spaghetti Squash Alla Vodka is one of his favorite dinners! This recipe is simple and so much better for you than regular old pasta.
A 1-cup serving of spaghetti squash has 42 calories while 1 cup of cooked pasta has 221 calories! As far as carbohydrates, 1 cup of cooked pasta contains 42 grams of carbs, while spaghetti squash only contains 10 grams of carbs. BIG difference!

YOU WILL NEED
1 small spaghetti squash
1 lb. of ground turkey or beef (optional) if you are a vegetarian, leave it out!
1/2 cup of chopped onions
1 jar of your favorite vodka sauce 
shaved parmesan cheese

Preheat oven to 350 degrees. Slice the spaghetti squash lengthwise and scrape out the seeds. See how to cut a spaghetti squash safely HERE. 
Place both halves of the spaghetti squash on a baking sheet cut side down, and bake for about 30 minutes. When you can easily puncture with a fork, it's done.
While the spaghetti squash is cooking, brown 1 lb of turkey and onions on medium heat until cooked through. Add the jar of vodka sauce, and simmer (covered) stirring frequently. When the spaghetti squash is cooked, let it cool about 10 minutes, then scrap out the inside with a fork. It will come out like spaghetti strands. 
Serve topped with vodka meat sauce and finish off with shaved parmesan cheese. YUM!
