Avocado Salsa

My awesome neighbor Karina (SEE HERE) introduced me to her famous avocado salsa and was nice enough to pass on the recipe! It's easy, delicious and right on time for summer!

INGREDIENTS:
-1 (9oz.) package of frozen corn
-1 (2 1/4 oz.) sliced black olives drained
-1 small red pepper chopped
-1/2 small onion chopped
-2 garlic cloves (minced)
-1/4 cup of olive oil
-1/4 cup of lemon juice
-1 1/2 tablespoons of white wine vinegar
-1/2 Teaspoon of dried oregano
-1/2 teaspoon of salt and pepper
-2 medium avocados choppped
-Tortilla chips

In a large bowl combine corn, olives, red pepper, onion and avocado. In a small bowl combine garlic, oil lemon juice, vinegar, oregano, salt and pepper. Mix well. Pour over corn mixture and toss to coat. Cover and refridgerate for 1 hour. Serve with chips!
