EASY Shrimp Tacos

My husband and I are currently on a health kick. We're both getting ready for shows where we need to be in tip top shape. It was a beautiful, sunny weekend here in Florida. After doing some yoga, I decided to whip us up some healthy shrimp tacos. They could not be easier and are just in time for summer!

YOU WILL NEED
A bag of frozen cooked shrimp (medium sized)
2 limes
1 lemon
1/4 cup of diced onion
Store bought coleslaw 
1 Avocado
Minced garlic
Dill (fresh or dry)
Olive oil
A bag of corn tortillas
Sea salt and pepper

Heat about 2 tablespoons of olive oil over medium heat. Add onion and 1 tablespoon of minced garlic. When onions are glassy, lower heat and add shrimp. I made 4 tacos so I used 12 shrimp. Being that the shrimp are already cooked, you are really just heating them up, so make sure the heat is very low. Add salt and pepper, sprinkle with dill and squeeze 1/2 a lemon over the shrimp. Stir, than remove from heat.
Heat 4 tortillas on a plate in the microwave for 1 minute. Layer center of each tortilla with coleslaw, a few slices of avocado than shrimp. Garnish each plate with a few slices of lime. Squeeze lime onto tacos and EAT!!!!!!!

The coleslaw mixed with the garlicy shrimp and the creamy buttery avocado is pure heaven! Want to make it even SIMPLER? Don't heat up the shrimp. Just toss in lemon juice and season with salt, pepper and fresh dill!

Oh yum, they do look good. I've had fish tacos, but I haven't tried them with shrimp. Thanks for the recipe!
