Easy Ramen Bowl

I first discovered this easy ramon bowl on Budget Bytes.  My husband and I work mostly out of the house, so I'm always trying to find an easy, inexpensive and healthy lunch that I can whip up here at home. This Ramen bowl was all of the above, so I decided to give it a shot. Not only is it delicious, it's also just $1.01 per serving for two servings. Beat that!


YOU WILL NEED:
1 package of Ramen Noodle soup (any flavor)
1 egg
1 cup of spinach
1/2 cup of sliced mushrooms
2 whole scallions chopped

Boil 2 cups of water in a saucepan. Add noodles and cook for 3 minutes stirring occasionally. Stir in spice packet. Turn heat to medium and add mushrooms, scallions and spinach. Cook about 2 minutes until veggies are slightly softened. Make a well in the center of the pot and crack the egg into it. Allow egg to poach in the broth until the whites are solid but the yolk is still runny. You can also break the yolk and stir the pot just slightly to yield egg ribbons like in egg drop soup.

Note: Water should not be boiling at this point or the egg will dissolve into small pieces which will result in a cloudy broth.

Serve! Grab some chopsticks and stir the egg into the soup.

Ooo, I like the addition of scallions and mushrooms. I tend to do this with broccoli (and the egg.) I call it my ghetto dinner :)
