EASY Red Pepper Appetizer

Are you ready for the worlds easiest AND healthiest appetizer? My sister-in-law taught me this (thanks Robin) and it's simple, yummy and the perfect color for a Christmas party! I'm not saying to ignore all those fattening dips, but it's always good to throw something healthy into the mix!

ALL YOU NEED:
One Red Bell Pepper
Lemon juice
Coarse Sea Salt
Black Pepper

Slice the pepper, remove seeds and then slice into strips. Arrange however you like. I always arrange them in a flower pattern. Looks pretty! Squirt generously with lemon juice and add sea salt and black pepper. Done!

All bell peppers are good for you, but the best are the RED ones! They are loaded with sweet, juicy flavor along with disease fighting antioxidants and all kinds of vitamins and minerals. Enjoy!

Ah yum. Was just munching through one the other day at lunch. While I'm happy to eat this raw and undressed, this is a great recipe for serving to other people who might not want to eat it that way. Thanks for sharing. We call them capsicums! x
