Turkey Chili

You can't go wrong with this chili. It's healthy, filling, and the perfect dish for fall!  I make a pot of this chili, and it becomes are lunch AND dinner for the next few days. No complaints in this house.  MUST be good!























YOU WILL NEED:

1 lb. of ground turkey meat.
29 oz. can of tomato puree
15.5 oz. can of dark red kidney beans
15.5 oz can of black beans
15.5 oz. can of diced tomatoes w/green chilies
9 oz. can of corn
1 cup of chopped onion
2 celery sticks chopped
2 garlic cloves minced
1 cup of salsa (mild, medium or HOT)
1/2 tbsp of chili power
 Half of a beer (I used) Amstel light. (Don't forget to drink the other half!)
Shredded cheese and  Greek yogurt to top chili

Heat a tablespoon of olive oil in a large pot (medium heat). Saute garlic, onion and celery until you can see through the onions. Add ground turkey and brown with salt and pepper. Drain any grease. Add the cans of tomato puree, beans, chopped tomatoes and corn. Stir, stir, stir. Add cup of salsa, chili powder and the beer. Stir, stir, stir! Turn the heat to low and let chili simmer for at least an hour. When ready serve sprinkled with shredded cheese (I used cheddar) and a dollop of greek yogurt. I used to use sour cream, but the yogurt is just as good and a lot healthier! I also buy a cornbread mix that I bake to serve with the chili. It's soooooooo good. Try it!

I love making chili- thanks for the recipe, can't wait to try it out! I like that it's with turkey instead of red meat. Yummy and healthy!
