Artichoke Chicken






















This is one of my favorite dinners to make because it's easy yet sophisticated. I invented this one night when all I had in the house were these ingredients.

2 Skinless boneless chicken breasts
1 12 oz. jar of quartered marinated artichoke hearts
1/2 cup chicken broth (I always have a box of chicken broth in the fridge)
1/2 cup of sliced onion
Rice
Salt & pepper

First you will need a crockpot. I think I've mentioned in the past that the crockpot is one of the best inventions ever! Spray the crockpot with cooking spray. Wash chicken breasts and place at the bottom of the pot. Add sea salt and pepper, onions, artichoke hearts and the chicken broth. Cover and set on low for 8 hours or high for 6 hours. I like to cook it for 8 hours because it makes my kitchen smell delicious, and the chicken is practically falls apart. No knife needed! I serve it over rice, but it also stands well alone. Add a side salad and dinner is served!
