Fried goat cheese appetizer

This appetizer is beyond delicious! I would eat fried goat cheese everyday if I could. I first had it at a local restaurant here in Orlando and thought..... I can make this!
YOU WILL NEED:
  • 4 oz of goat cheese (just double recipe for 8 ounces).
  • 1 egg
  • Seasoned panko bread crumbs. (found next to regular bread crumbs)
  • flour
  • Bagette (sliced to toasted to make crostini's).

Put the goat cheese in the freezer for about 10-15 minutes so it will be easier to slice. In 3 separate bowls put flour, egg and Panko breadcrumbs. I don't measure anything. I just eyeball it. With a WET knife, slice goat cheese. Wipe and rewet knife between cuts. Dip and lightly coat a slice of the goat cheese in flour, then put into the egg mixture and then coat with the breadcrumbs. Put breaded goat cheese slices on parchment paper while you wait to fry them.

Coat a nonstick pan with olive oil and heat on medium. When oil becomes hot, drop goat cheese slices into pan. Heat for about 1 minute on each side (turn with spatula) until golden brown. It doesn't take long! Remove cheese slices and place on a paper towel to cool. Serve with toasted crostini's and fresh salsa. HEAVEN!
