Stuffed Chicken Breasts

My sister-in-law makes the most delicious gourmet recipes. When she was in town last week she made this AMAZING stuffed chicken. 

1 lb. of skinless boneless chicken breasts
1 Bag of spinach
1 Bag of ceasar croutons (crushed)
1 Roasted red pepper 
Crumbled Feta
 Cream Cheese
1 egg beaten

Butterfly and pound chicken very thin. Mix equal parts cream cheese and Feta. Spread mix onto chicken, layer with spinach then roasted red pepper.

Roll up chicken and secure with pick. Coat with egg, then roll in crushed croutons. Set chicken in glass baking dish and bake at 350 degrees for 45 minutes. Serve with a side salad and vegetable. Healthy and yummy!
