Strawberry Bruschetta




















Valentine's Day is in just a few hours, and I've been trying to come up with some clever yet unpredictable ideas to celebrate with my husband. We're both on deadlines for work, and are staying in, so my plan is to have an entire Valentine's Day menu through out the whole day. Stay tuned, because on Wednesday I will unveil the pics! ( : 
Here is an idea that I had for one of my appetizers. Strawberry Bruchetta. My husband is on a gig in Miami, so I practiced this dish on my neighbor. Thanks Karina! We ran into a few snags, but now that I've practiced, tomorrow should be a yummy breeze!


YOU WILL NEED:
2 Cups of strawberries (sliced)
1/4 cup of Balsalmic vinegar
1 bagette (sliced)
8 Oz. of Goat Cheese
Fresh Basil
Sea salt and  Black pepper





Preheat oven to 350 degrees. Toss strawberries in a bowl with the balsalmic vinegar, spread out evenly on a cookie sheet and bake for 5 minutes. Remove to cool.


















Brush both sides of the slices of baquette with olive oil and broil on each side for a few minutes. WARNING: Make sure you watch the baquettes carefully or you will end up with this!!!....... I did twice by the way!!!!! 



When the bread is SLIGHTLY browned, spread with a layer of goat cheese, add strawberries, salt and fresh ground pepper and finish off with a sprinkle of fresh basil.  The key to this recipe is to time everything so that the strawberries are still warm as you add them to the melting goat cheese on the bread slices. Enjoy with a glass of wine! We had a nice Pinot Noir. ( :

Hope you're having a lovely Valentine's day. Ours was great with a home cooked dinner and long walk afterwards along the water with my husband and dog. the simple things. this recipe looks so delicious. the list of things i want to eat with you are growing!
