Individual Antiposto


This individual antipasto has become my latest nightly ritual with a glass of vino!  I discovered this idea in Real Simple Magazine. Not only is it easy, but it's also the perfect healthy snack before dinner.

YOU WILL NEED
1 part skim mozzarella stick
1 slice of Prosciutto
3 (or more) olives of your choice. I used one Kalamata olive & 2 Almond stuffed Queen olives. 
Sometimes I'll add a small slice of a crusty bread or some roasted red peppers drizzled with balsamic vinegar.

I do this with pickled asparagus, salami, and havarti cheese. Roll up and enjoy!
