Faux benedict











This is one of my favorite breakfasts to make. Not only is it simple and delicious, but it's also a perfect breakfast to make for a large group! It's also a lot healthier than traditional eggs benedict!
Ingredients:
  • Eggs
  • Sliced ham (I use turkey for my husband)
  • Pesto (optional)
  • Mozzarella cheese (or any cheese of your choice)
  • Cherry tomatos
  • Salt & pepper
  • English muffin or bread of your choice. I used sour dough.










Preheat oven to 350 degrees. Spray a muffin pan with cooking spray. Place a slice of ham in as many muffin cups as you'd like. Put a teaspoon of pesto (optional) at the bottom of each cup. Add a half of a cherry tomato & about an inch chunk of mozzarella cheese and then crack an egg into each cup. Sprinkle with salt and pepper. If you are using ham salt is not needed. Pop into oven and cook for 10-15 minutes depending on how cooked you like your egg. Scoop out with a large spoon and place over an english muffin or toast of your choice. Enjoy!

I have NEVER had Eggs Benedict - can you believe it? But I will definitely be trying this recipe out!
