Do you own a crock pot? If you don't, go out and get one right now! The crock pot is one of the best inventions ever! I only wish I discovered it sooner. What could be easier than throwing a few things in a pot, plugging it in, and then having a healthy and delicious dinner with little to no effort at all! This recipe is VERY simple. See below.
- 1 can of Amy's Thai Coconut soup
- 1 small onion chopped (optional)
- 1 lb of skinless boneless chicken breasts (if you prefer dark meat, use chicken thighs)
- salt & pepper
