Thai Coconut Chicken

Do you own a crock pot? If you don't, go out and get one right now! The crock pot is one of the best inventions ever! I only wish I discovered it sooner. What could be easier than throwing a few things in a pot, plugging it in, and then having a healthy and delicious dinner with little to no effort at all! This recipe is VERY simple. See below.


Ingredients:
  • 1 can of Amy's Thai Coconut soup
  • 1 small onion chopped (optional)
  • 1 lb of skinless boneless chicken breasts (if you prefer dark meat, use chicken thighs)
  • salt & pepper
  • white rice
Okay, this is super easy! Put chicken breasts (2-4) in the crock pot. Salt and pepper chicken breasts. Add chopped onions. I LOVE onions, so I add them to everything, but you can also make this dish without. Pour Amy's Thai Coconut soup over the chicken. Put on the lid and set on low for 7-8 hours or on high for 4 hours.  serve over steamed rice and serve. You will LOVE this! Enjoy!

amy's always has yummy canned items - basically the only canned items i will buy (:
